The sweet potatoes are easy. I find them a bit too much without some spice to cut the sugar. They're fried in a very easy curried oil, with onion, a lot of bay leaves, lemon grass, garlic, and some generic green curry. Peppers to taste. I make it a bit on the hot side and then gravy nicely cools it off. Or yogurt would be traditional.

We brought the apple bits.  "Apple compote" we call it. 
It's very easy too.  We were limited to what we could prepare in our poorly-equiped temporary digs.  Here's a loose recipe:A bunch of apples, maybe 6 largish ones.  Diced with skin.
Zest of 1/2 medium orange.
A cup of walnuts. 

Maybe a cup of raisins.
Cinnamon, ginger and allspice to taste

Approximately 30 drops of stevia extract or equivalent sweetener to taste.
Simmer or nuke until apples are soft. 

The chayote stir-fry was just us trying out the chayote Jay and Ciel gave us.  We peeled and diced it up along with some onions, peppers, leftover chicken, put it in a pan with some oil and sautéed it on the BBQ grill we've been using to cook on.  Seasoned with soy sauce and garlic.  Not gourmet fare but really very tasty!  It's even good raw.  Tastes like a cross between a pear and a cucumber to me.

Also have requests for my salad dressing.

Balsamic Vinaigrette

1/2 cup balsamic vinegar
3 Tbsp Dijon mustard
3 Tbsp honey
2 garlic cloves minced
2 small shallots ( or scallions) chopped
1/4 tsp salt
1/4 tsp pepper
1 cup olive oil

Whisk together first 7 ingredients until blended. Gradually whisk in 
olive oil . Yields 2/3 cups . Refrigerate any unused  dressing.

About half of this recipe is enough for a big salad for 4 to 6 people.
